M.C.D.’s World Famous Banana Bread for the Bye Week

We’ve made it over the hump in terms of bye weeks in the NFL, so we decided to give Chef Chad a bye week off as well.

That, and next week is Thanksgiving, so we’re expecting some fantastic menu item with the extra week off.

Pressure’s on, Chef! But things always come out better after being in a pressure cooker, no? Whether it be diamonds or beef stew!

Well, one thing Chef can’t do is bake. No, really. Do not ever buy Chef Chad cookies. Get them from his mom instead.

And while I can bake, we’re going with my mom’s recipe on this one, or how she’s known in households across the South and the West, Ms. Carol Dye.

So, with that in mind, let’s bake up some of M.C.D.’s Famous Banana Bread for the Bye Week!

What We Need for the Banana Bread:

The prep table is ready to go!

3 cups of flour
1 tsp salt
1 tsp baking soda
.5 tsp baking powder
3 tsp cinnamon (optional)
4 eggs
1 cup of oil or butter
2 cups of sugar
3 tsp vanilla
2+ cups smashed overripe bananas
nuts (optional)

What We’re Doing with It:

This one doesn’t have a lot of moving parts, but the order of operations is important, so take it one step at a time and don’t just mix everything together all at once.

Start by preheating your oven to 325 degrees.

Alright, let’s get to work. In a container, sift together your dry ingredients (flour, salt, soda, baking powder, cinnamon) and then set aside.

Now in a large bowl, beat your eggs to smoothness. Now add in your oil and sugar.

Then start to add in your smashed bananas. If you let them age right, this should be a breeze. Remember, the darker the banana, the better. Now add in vanilla and stir around.

Next, stir in your dry ingredients and mix it all together well. If you’re doing nuts, now is the time to add them in there, about a cup to a cup in a half.

Finally, spoon your banana mixture into your greased up baking pans. Depends on what size you’re using how many you’ll fill up.

Now just pop them in the oven for about 45 minutes to an hour, then put them to the side to cool, and you’re done!
