The Tailgate Guac!

When you dream of avocados, you really dream of guac… so here we go, Chef’s simple multiple situation Tailgate Guacamole!

Fresh made always trumps store bought!

What we need…

3 ripe avocados (if you need them to ripen faster, hit them in a paper bag with some bananas)

1 T of lime juice

2 of cloves minced garlic

½ of t salt

½ t of cumin

¼ t cayenne

¾ cup of small diced red onion

2 Roma tomatoes- seeded and small diced

2 T of chopped cilantro

½ cup of toasted pepitas

½ cup of pomegranate seeds

Ah yes, one day we shall discuss the delicacy that is of divining a pomegranate.

Dash of Corona (drink the rest)

What we are doing:

In a glass or pyrex bowl, not stainless or aluminum, scoop out avocados and add lime juice, garlic, salt, cumin and cayenne and smush.

Keep it chunky.

Fold in onion, tomato, cilantro, pepitas, and pom seeds.

Dash in the Corona.

Cover and chill.
